Zingy chicken salad
Serves 2, 4GLs per serving
This chicken salad provides a good source of protein and is full of antioxidants and vitamins.

Ingredients:
- 2 small chicken breasts
- Juice of 3 lemons
- 2 cloves of garlic finely chopped
- A handful of finely chopped coriander
- Chopped lettuce
- Half cucumber, diced
- 2 tbsp sun-dried tomatoes, chopped
- 2 spring onions thinly sliced
- 1 handful of toasted pine nuts
- Black pepper to taste
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
Method:
- Butterfly the chicken breast leaving a hinge on the thickest edge
- Marinate the chicken in the fridge in the lemon juice, garlic and coriander for at least 1 hour
- Grill the chicken breasts for approx. 5 mins each side (until cooked through)
- Whilst chicken is cooking, mix the lettuce, cucumber, tomatoes and spring onions in a bowl
- Toast the pine nuts for a few minutes in a hot oven until golden. Add to salad
- Cut chicken into strips, add it to a salad with oil, vinegar and pepper and mix well
