Low GL Spicy Chicken Recipe

Spicy Chicken with a Kick

Serves 2 (1 GL per person)

A simple recipe to jazzup any cut of chicken – works well with salmon fillet s too. Only 5 minutes preparation time and 20 minutes to roast.
Serve with a mixed green salad and aportion of creamy coleslaw (see below).
Spicy Chicken

Ingredients:

  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon black peppercorns – freshly ground
  • 1/2 teaspoon Lo-salt
  • 1 clove garlic
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • juice of 1/2 lemon
  • 2 portions of chicken or salmon fillets

Method:

  1. Combine the cinnamon, pepper, salt, paprika and thyme together.
  2. Crush the garlic and add to the dry ingredients with the lemon juice.
  3. Rub well into 2 portions of chicken or fish before roasting or grilling.
  4. Serve with a portion of Creamy Coleslaw (below) plus a mixed or green salad dressed with a little olive oil & lemon based dressing.

Creamy Coleslaw

Cabbage is packed with vitamins and minerals. So are carrots, also high in vitamin A, and onions, high in sulphur-rich amino acids which help to remove toxins from the body. This coleslaw is nothing like the limp supermarket variety: it really packs in the power and crunch and goes well with the spicy chicken recipe above.
Green Salad to accompany spicy chicken

Serves 2 (4GLs per serving)

  • 200g red or white cabbage, finely shredded 90g carrots, grated
  • 1/2 small white (mild) onion, finely chopped
  • 1 tbsp low fat mayonnaise
  • 1 tbsp low fat live yoghurt or greek yoghurt
  • Freshly ground black pepper to taste

Method:

  1. Mix thoroughly and serve with Spicy Chicken and a mixed or green salad (see above).
