Super Salad with Pomegranate, Spinach & Walnuts
This salad can team up perfectly well with the pea, feta and mint frittata I posted a recipe for earlier. This salad can boost your nutrient intake and is full of different textures and great flavours. Spinach is considered to be one of the world’s healthiest vegetables when it comes to nutrient richness. Spinach is very high in vitamins and minerals but also contains concentrated quantities phytonutrients like beta carotene, lutein and zeaxanthim and flavonoids a powerful antioxidant.
Mother nature has created perfect nutrient boosting packages when it comes to nuts and walnuts are no exception. The list of health benefits associated with walnuts is long. I will list a few here. Walnuts look like a brain and funny enough they also promote brain health. In addition, walnuts also contain the plant based omega 3 fat (ALA). This type of fat is anti inflammatory and helps preventing blood clots that could cause a fatal heart attack. Walnuts also help maintaining your ideal weight and it contains rare and powerful antioxidants found only in a few foods around the world.
- 80g pomegranate seeds
- 80g walnut pieces
- 1 bag baby spinach leaves
- 1 tbsp. red wine vinegar
- 1 tsp. Honey
- 2 Tbsp. extra virgin olive oil
- salt and pepper, to taste
- Layer the pomegranate and walnut onto the spinach.
- Mix all the vinaigrette ingredients together, pour over the top of the salad and toss lightly.
