This week’s oriental chicken salad & mixed berry fool recipes are inspired by the Zest4Life programme I run on a weekly basis. This salad is very simple to make so perfect for a hot Indian summer evening and is healthy. The oriental chicken is lean protein and the salad is packed with antioxidants. The berries in the berry fool also provide great antioxidants and the yoghurt contains probiotics which improve your gut health. Enjoy this tasty recipe and let’s hope we get a few more sunny days this year.

Oriental chicken salad
Serves 2
4 GLs per serving
Ingredients:
2 cooked, skinless chicken breasts, shredded
1 medium carrot, grated
1/4 cucumber, grated
1/2 small red onion, grated
2 handfuls bean sprouts
Small handful fresh mint leaves
1 red pepper, sliced
25g roughly chopped unsalted cashew nuts
Dressing:
1/2 tbsp olive / nut oil
1/2 tsp tamari soy sauce
1/2 tsp sesame oil
1/2 tsp grated ginger
1 small garlic clove, peeled and crushed
Juice of half a lime
Method:
1. Mix all the vegetables, mint, nuts and chicken in a bowl
2. Mix the dressing ingredients in a bowl, pour over the salad, mix well and serve

Mixed Berry Fool

Serves 4
5 GLs per serving
500g fresh berries (e.g. strawberries, blackberries, raspberries or blueberries)
1 large sliced banana
150g low fat Greek yoghurt
2 tbsp xylitol / agave syrup
A few mint leaves
1. Puree half the berries, the banana and xylitol / agave with a hand held blender.
2. Put the yoghurt in a bowl and add in 3tbsp of the fruit sauce.
3. Spoon the rest of the berries on the mixture when serving in small bowls.
