Fruity salsa salmon
This recipe will provide a nutritious family meal bursting with healthy fats,
quality protein, vitamins, minerals, phytonutrients and fibre.
Eating salmon regularly will boost your family’s Omega 3 intake – so
important for skin health, brain development and function, cardiovascular
health and joints. You could replace the salmon in this recipe with any oily or
white fish fillets. Fish is also a great source of protein and it is low in saturated
fat.

Mangoes and peaches are a firm favourite with kids as they are so tasty.
They are both packed with vitamin C, beta carotene, potassium and lots of
fibre. Both are great for the digestive system and should help ease
constipation
Red onions contain phytonutrients which act as powerful antioxidants. Along
with the rest of the onion family (including garlic) they contain good levels of
sulphur which is good for heart health and managing blood sugar levels.
Onions are also prebiotics, which means that they act as food for probiotics
(healthy bacteria) and are a great source of fibre.
Ingredients (Serves 4)
1 ripe mango
1 ripe but firm peach, skinned and diced
Half a red onion, finely chopped
4 tbsp white wine or cider vinegar
2 tbsp chopped fresh coriander
1 salmon fillet per person or half for a small child
1 lime
Method
Preheat the oven to 180C/350F/Gas Mark 4
To make the salsa, remove the mango flesh from the stone and dice half of it
finely. Mash the other half with a fork. Place both the diced and mashed
mango in one bowl. Add the finely chopped red onion, diced peach, vinegar
and coriander and mix well.
Place each salmon fillet on a 15cm square piece of greaseproof paper, and
top each one with a quarter of the salsa. Close up the paper to make parcels,
and place on a baking tray.
Cook in the preheated oven for 18 minutes
When cooked take the salmon out of the foil, place on plate with the salsa and
pour the juices from the parcel over the fish. Squeeze the lime over the
salmon.
Serve with mashed potatoes, broccoli and green beans and enjoy!
