Recipe: Broccoli and Blue Cheese Soup

I made this delicious soup for dinner last night. It was very simple to make and tastes amazing, and has real health benefits.

Broccoli is a true superfood containing a number of compounds which have cancer preventing properties such as sulforaphanes and indoles. In particular it contains high levels of a compound called indole-3-carbinol which encourages the body’s production of a form of oestrogen that is cancer preventative. A high consumption of broccoli and other cruciferous vegetables has an inverse association with bladder and colon cancer. The sulphur compounds in broccoli are also important for the function of the liver and other detoxification organs. It also contains great levels of calcium, magnesium and vitamin K which are important for bone health and the prevention of osteoporosis. Broccoli contains good levels of soluble fibre which are important for reducing cholesterol, helping the body excrete old hormones and preventing constipation.

Blue cheese may surprise you as it has health properties too. The blue-green mould that marbles some blue cheeses is called Penicillium roqueforti and it fights bacteria in the body.

Recipe

Ingredients

A knob of butter
1 large onion roughly chopped
1 large floury potato peeled and cut into chunks
1 litre vegetable stock
1 large head of broccoli roughly chopped
100g blue cheese
Freshly ground pepper

Method

  1. Heat the butter in a pan, add the chopped onions, and cook gently until softened.
  2. Add the potatoes and stock bring to the boil and simmer until the potatoes are tender.
  3. Add the broccoli and cook for 3-4 minutes, until tender, add the cheese, and blend until smooth.
  4. Add pepper to taste
