Earlier this week I posted an article about the great benefits of prawns and why they are a much better alternative on a barbecue than processed burgers and sausages. After writing that article I realised it would be great to accompany that article with a nice recipe you could try this summer…if we’re lucky maybe even this weekend? I found this recipe for prawn skewers online and the fruity freshness makes this the ultimate summer barbecue food.
Ingredients:
- 12 large green prawns
- 2 pears
- 6 small pieces of pineapple
- 6 lychees, peeled and deseeded
- ½ cup of fresh lime juice
- 2 tablespoons of salt reduced tamari
- chilli flakes, to taste
- 6 wooden skewers, soaked in water for an hour
Method:
- In a medium sized bowl mix together the lime juice, tamari and chilli flakes
- Soak the prawns in this marinade for a few minutes
- Divide the prawns and fruit evenly and thread onto the soaked skewers
- Cook the skewers on the barbecue
