Fruity Flapjacks

This recipe for fruity flapjacks is a simple way to make a balanced snack for yourself or your children in no time at all. The agave nectar will give a slower, more sustained energy release compared to golden syrup, so this would be my number one choice for this recipe. The mixed seeds provide fibre, protein, zinc and magnesium.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 150g of coconut oil
  • 150g rolled oats
  • 6 tablespoons of agave nectar/syrup or golden syrup
  • 100g mixed seeds (sunflower, pumpkin, sesame, flaxseed)
  • 50g dried cranberries or other dried fruit
  • 1 teaspoon of ground cinnamon

Preparation:

  1. Preheat oven to 190C
  1. Grease and line a baking tray. I use a brownie pan that is 20 x 30cm and 30cm deep
  1. Gently melt the coconut oil in a large, heavy based saucepan and add the agave syrup or golden syrup
  1. Stir well and take off the heat when melted
  1. Add the oats, seeds, dried fruit and ground cinnamon and stir well until combined
  1. Press the mixture into your baking tray
  1. Bake in the oven for 20 minutes
  1. Take out, slice into fingers and let it cool completely
