This recipe for fruity flapjacks is a simple way to make a balanced snack for yourself or your children in no time at all. The agave nectar will give a slower, more sustained energy release compared to golden syrup, so this would be my number one choice for this recipe. The mixed seeds provide fibre, protein, zinc and magnesium.
Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients:
- 150g of coconut oil
- 150g rolled oats
- 6 tablespoons of agave nectar/syrup or golden syrup
- 100g mixed seeds (sunflower, pumpkin, sesame, flaxseed)
- 50g dried cranberries or other dried fruit
- 1 teaspoon of ground cinnamon
Preparation:
- Preheat oven to 190C
- Grease and line a baking tray. I use a brownie pan that is 20 x 30cm and 30cm deep
- Gently melt the coconut oil in a large, heavy based saucepan and add the agave syrup or golden syrup
- Stir well and take off the heat when melted
- Add the oats, seeds, dried fruit and ground cinnamon and stir well until combined
- Press the mixture into your baking tray
- Bake in the oven for 20 minutes
- Take out, slice into fingers and let it cool completely
